Lemon Mallow Waffles

Serves 4, Prep and Cook 35 mins

200g box frozen waffles (12)

1 cup lemon curd

250g white marshmallo­ws

1 Grease an 18cm x 20cm rectangula­r ovenproof dish.

2 Toast waffles. Line base of prepared dish with half the waffles, trimming to fit firmly.

3 Spread curd over waffles. Top with remaining waffles, trimming to fit. Arrange marshmallo­ws over the top.

4 Cook, uncovered, in a moderate oven (180C) for about 15 minutes or until lightly browned. Remove. Cool slightly.

5 Loosen edges with a metal spatula to serve.
