Supreme Pizza Pasta Bake

Serves 4, Prep and Cook 45 mins

300g elbow pasta 2 tblsps olive oil

1 red onion, finely chopped

2 tsps garlic paste 200g punnet sliced mushrooms 700g jar passata with basil

¹⁄³ cup chopped fresh basil, plus extra to serve

2 cups grated pizza cheese

1 small red capsicum, cut into thin strips 100g shaved leg ham, torn into large pieces 50g sliced pepperoni Garlic bread, to serve

1 Cook pasta in a large saucepan of boiling, salted water until tender. Drain. Return to pot. Cover to keep warm.

2 Meanwhile, heat oil in a large, non-stick frying pan over a medium heat. Add onion, garlic and mushrooms. Cook, stirring occasional­ly, for 5 minutes, or until mushrooms are soft. Remove from heat.

3 Add mushroom mixture to pasta with passata, basil and 1 cup of the cheese. Stir to combine. Transfer to an ovenproof dish (10-cup capacity). Top with capsicum, ham and pepperoni. Sprinkle with remaining cheese.

4 Cook in a moderately hot oven (190C) for 25 to 30 minutes, until golden brown.

5 Garnish with extra basil. Serve with garlic bread.
