Banana and Maple Pancakes
Makes 12, Prep and Cook 20 mins
¼ cup mashed banana (1 medium)
200g tub Greek yoghurt
½ cup milk
2 eggs, lightly beaten
2 tsps vegetable oil
1 tsp vanilla extract
1 cup self-raising flour
2 tblsps caster sugar Cooking oil spray or butter, for greasing Sliced banana and pure maple syrup, to serve
1 Place banana, yoghurt, milk, eggs, oil and vanilla in a bowl. Whisk to combine. 2 Combine flour and sugar in a large bowl. Make a well in centre. Add banana mixture. Whisk until smooth.
3 Heat a lightly greased, large, non-stick frying pan over a medium heat. Pour ¼ cup of batter into frying pan. Repeat to make three pancakes.
4 Cook for about 2 minutes, or until bubbles appear on surface. Turn and cook for a further 1 minute, or until browned. Remove. Cover to keep warm. Repeat to make 12 pancakes in total. Grease pan lightly between batches, as needed.
5 Serve warm pancakes with bananas and maple syrup.
