One-pan Beef Nachos

Serves 4, Prep and Cook 30

1 onion, finely chopped 500g beef mince

30g packet taco seasoning mix 425g can black beans,

drained, rinsed

400g can chopped tomatoes 125g can corn kernels,

drained, rinsed

200g packet round corn chips 1 cup grated pizza cheese Sour cream, sliced avocado, fresh coriander sprigs, chilli sauce and lime wedges, to serve

1 Heat an oiled, large, deep ovenproof frying pan over a medium to high heat. Add onion. Cook, stirring occasional­ly, until soft.

Add mince. Cook, breaking up with a wooden spoon, for 5 minutes, or until browned.

2 Add taco seasoning, 1¾ cups water, beans, tomatoes and corn. Bring to boil. Simmer for 10 minutes, or until thickened. Remove from heat. Top with corn chips and cheese.

3 Cook in a hot oven (200C) for 5 minutes, or until cheese is golden.

4 Top with sour cream, avocado and coriander. Serve with chilli sauce and lime wedges.
