Chicken Noodle Frittata

Serves 4, Prep and Cook 40 mins

2 x 72g packets 2-minute chicken noodles

6 eggs

½ cup milk

2 green spring onions, thinly sliced

½ cup semi-dried tomatoes, coarsely chopped

1 cup grated Tasty cheese Tomato relish, to serve

1 Grease an oval ovenproof dish (8-cup capacity). 2 Place noodles in a saucepan of boiling water, reserving noodle sachets. Boil for 2 minutes. Drain well.

3 Spread noodles over base of prepared dish.

4 Whisk eggs and milk in a large jug until combined. Stir in noodle sachets, onions, tomatoes and half the cheese. Season with pepper. Pour over noodles in dish. Sprinkle remaining cheese over top.

5 Cook, uncovered, in a moderate oven (180C) for about 25 minutes, or until set. Remove. Stand for 5 minutes.

6 Serve warm frittata with tomato relish.
