Leeks add a subtle sweetness and delicious richness to casseroles, soups, pies and vegetable dishes – just make sure you remove the dirt that can get trapped between the layers! Start by trimming off the roots and tough green tops, then cut leeks into 10cm lengths. Cut each piece in half lengthways, rinse well under cold water, rubbing with your fingers to remove any hidden dirt. Slice thinly and add to recipes, or try cutting into batons and braising in a little butter and white wine as a tasty side.
