Lemon Delicious Puddings
Makes 6, Prep and Cook 50 mins
75g unsalted butter,
at room temperature ¾ cup caster sugar
2 tsps finely grated
lemon rind
4 eggs, separated
½ cup self-raising flour ½ cup lemon juice 1¼ cups milk Thickened cream, to serve
1 Grease six ovenproof dishes (1-cup capacity). Place in a large roasting pan. 2 Beat butter, sugar and rind in small bowl with an electric mixer until light and fluffy. Beat in egg yolks, one at a time, until well combined. Transfer to a large bowl. 3 Add flour, juice and milk. Stir until combined. Mixture will look curdled at this stage.
4 Beat egg whites in small, clean bowl with an electric mixer until firm peaks form. Gently fold into butter mixture. Spoon evenly among prepared dishes. Pour enough boiling water into roasting pan to come halfway up sides of dishes.
5 Cook in a moderate oven (180C) for about 30 minutes, or until just set and lightly golden.
6 Serve hot puddings with cream.
