Citrus Honey-glazed Chicken with Rice
Serves 6, Prep and Cook 30 mins
6 x 200g chicken breasts 2 cups jasmine rice
5 green spring onions,
diagonally sliced
1 cup fresh coriander leaves
CITRUS HONEY GLAZE
¾ cup ginger, lemon
and lime marmalade ¼ cup honey
2 tblsps light soy sauce 1 tblsp finely shredded
orange rind
¼ cup orange juice
1 To make glaze, combine all ingredients in a medium saucepan. Season with salt and pepper. Bring to boil. Boil for about 8 minutes, or until slightly thickened. Remove. Transfer half the glaze to a small bowl. 2 Meanwhile, heat an oiled, large frying pan over a high heat. Add chicken in two batches. Cook, for about 3 minutes, or until golden. Transfer to an oven tray lined with baking paper. Brush the glaze from the bowl over chicken.
3 Cook in a hot oven (200C) for about 15 minutes, or until chicken is cooked through.
4 Gently boil remaining glaze for about 3 minutes, or until thickened.
5 Meanwhile, combine rice and 4 cups of water in a large saucepan. Bring to boil. Simmer, covered, for about 8 minutes, or until tender. Drain. Stir in onions and coriander.
6 Serve chicken with rice. Drizzle with glaze.
