Crumpet French Toast

Serves 4, Prep and Cook 15 mins

3 eggs

½ cup milk

2 tblsps maple syrup,

plus extra to serve 1 packet (6) crumpets 50g unsalted butter 250g punnet strawberri­es,

sliced

Vanilla ice-cream, to serve

1 Whisk eggs, milk and syrup in a medium jug until combined. Transfer to a shallow dish.

2 Place half the crumpets into egg mixture. Stand for 1 minute, or until soaked.

Remove, draining off excess. Transfer to a plate. Repeat with remaining crumpets and egg mixture.

3 Melt half the butter in a large, non-stick frying pan over a medium heat until butter starts to foam. Add half the crumpets. Cook for about 2 minutes on each side, or until golden brown. Remove. Repeat with remaining crumpets, adding remaining butter to pan. 4 Serve crumpets topped with sliced strawberri­es and ice-cream. Drizzle with extra maple syrup.
