Passionfruit Melting Moments
MAKES 15 PREP & COOK 50 MINS
250g unsalted butter, chopped, at room temperature
1 tsp finely grated lemon rind
½ cup icing sugar mixture
1²/³ cups plain flour
½ cup cornflour
PASSIONFRUIT FILLING
75g unsalted butter, chopped, at room temperature
1¼ cups icing sugar mixture
1 tblsp fresh passionfruit pulp
1 Grease and line 3 large oven trays with baking paper.
2 Beat butter, rind and icing sugar in a small bowl of an electric mixer until light and fluffy. Transfer to a large bowl. Add combined sifted flours. Stir until well combined.
3 Roll tablespoons of mixture into balls. Place about 4cm apart on prepared trays. Gently press a fork into each biscuit to slightly flatten.
4 Cook in a moderately slow oven (160C) for about 15 to 18 minutes, swapping trays halfway through, or until edges are lightly browned. Cool on trays.
5 To make passionfruit filling, beat butter and icing sugar in a small bowl of an electric mixer until pale and fluffy. Beat in pulp.
6 Sandwich biscuits together with passionfruit filling, about 2 heaped tsps in each.
