NATURALLY SWEET IN FLAVOUR, DELICIOUS AND VERSATILE
Pumpkin, Thyme and Caramelised Onion Pizza SERVES 4 PREP & COOK 30 MINS
500g packet diced butternut pumpkin
1 tsp dried thyme leaves
2 x 27cm round pizza bases
1 cup roasted red capsicum (150g), thickly sliced
200g tub bocconcini, drained, torn
½ cup caramelised onion Baby rocket leaves, to serve
1 Heat an oiled, large frying pan over a medium heat. Add pumpkin and thyme. Cook, stirring, for 8 to 10 minutes, or until just tender and lightly golden. Remove.
2 Place pizza bases on separate oven trays. Divide pumpkin, capsicum and bocconcini between pizzas. Dollop teaspoonfuls of caramelised onion over tops.
3 Cook in a very hot oven (220C) for 12 to 15 minutes, or until bases are crisp. Serve pizzas topped with rocket.
