Free-form Strawberry Meringue Cheesecake SERVES 4, PREP 15 MINS
■ 100g packet mini meringue drops
■ 250g punnet strawberries, hulled and sliced
■ 175g cream cheese, chopped, at room temperature
■ 2 tblsps icing sugar mixture
■ 1 tsp vanilla essence
■ 1 cup thickened cream
1 Place meringues in a medium snap-lock bag. Lightly crush into pieces.
2 Combine strawberries and half the crushed meringue in a medium bowl. Stand for 5 minutes, stirring occasionally, or until meringues soften.
3 Beat cream cheese, sugar and vanilla in small bowl of an electric mixer until smooth. Add cream. Beat until soft peaks form.
4 Divide cream cheese mixture among four dessert glasses (1¼-cup capacity). Top with strawberry mixture and the remaining crushed meringues. Serve immediately.
