Japanese Beef and Miso Noodles

SERVES 4, PREP & COOK 15 MINS

■ 440g packet fresh udon noodles

■ ¼ cup soy sauce

■ 2 tblsps white miso paste

■ 500g beef stir-fry strips

■ 1 large carrot, cut into matchstick­s

■ 150g snow peas, thinly sliced

■ Toasted sesame seeds, to garnish

1 Cook noodles according to packet directions. Drain.

2 Whisk soy sauce, miso paste and 2 tblsps of water in a small jug until combined.

3 Heat an oiled wok over a high heat. Add beef in two batches. Stir-fry for about 2 minutes, or until just cooked. Return all beef to wok with noodles, carrot, snow peas and sauce mixture. Stir-fry for about 1 to 2 minutes, or until hot.

4 Garnish with toasted sesame seeds.
