A refreshing accompaniment to spiced fish cakes or grilled chicken.

1⁄2 continental cucumber, diced 2 tbsp mint or coriander, finely chopped Pepper 1 tsp freshly grated ginger Juice of 1 lime 1 tbsp fetta, crumbled Method
Using a sharp knife, carefully slice off the top and bottom of the orange. Using downward strokes, slice around the curve of the orange to cut the skin away from the flesh and discard. Dice finely the orange flesh. Combine all ingredients and serve sprinkled with fetta as a side accompaniment to serve with fish or chicken.
