Or­ange salsa

A re­fresh­ing ac­com­pa­ni­ment to spiced fish cakes or grilled chicken.

Preparation 5 min­utes Cook­ing nil Serves 4 In­gre­di­ents

2 or­anges

1⁄2 con­ti­nen­tal cu­cum­ber, diced 2 tbsp mint or co­rian­der, finely chopped Pep­per 1 tsp freshly grated gin­ger Juice of 1 lime 1 tbsp fetta, crum­bled Method

Us­ing a sharp knife, care­fully slice off the top and bot­tom of the or­ange. Us­ing down­ward strokes, slice around the curve of the or­ange to cut the skin away from the flesh and dis­card. Dice finely the or­ange flesh. Com­bine all in­gre­di­ents and serve sprin­kled with fetta as a side ac­com­pa­ni­ment to serve with fish or chicken.
