Turkey and cherry salad
Preparation 15 minutes Cooking 10 minutes Serves 4 Ingredients Lettuce, washed 250g turkey, cooked 1 cup fresh cherries, deseeded and halved 2 stalks celery, sliced diagonally 3 spring onions, chopped 1⁄2 cup slivered almonds, toasted Dressing 1⁄4 cup olive oil 1⁄4 cup lime juice 1 tsp fresh ginger, grated 2 tbsp chopped parsley Method Line a salad bowl with lettuce leaves and top with turkey, cherries, celery, spring onions and almonds. Place all dressing ingredients in a jar. Shake well and pour over salad. Serve immediately.
