THE DO-IT-YOURSELF GIN

When Lord Byron Distillery opened its door earlier this year, owners Helen and Brian Restall were of the mind that there were already enough exceptional local gins available.

They decided the only thing left to do was to let their customers make their own bespoke gin. During a two hour workshop in the ‘Ginstitute’ in Byron Bay, gin lovers are guided through selecting the botanicals, then steeping them in alcohol and distilling in a micro still.
