Beef & wom­bok herb salad

Serves: 4 Prep + cook time: 15 min­utes In­gre­di­ents

• 1 tbsp veg­etable oil

• 300g beef stir-fry strips

• ½ small wom­bok (350g), shred­ded finely

• 1 fresh long red chilli, sliced thinly

• ¾ cup roasted peanuts, chopped coarsely

• 100g baby spinach leaves

• 1½ cups loosely packed fresh mint leaves

• ½ cup loosely packed fresh Viet­namese mint leaves


• 1½ tbsp tamarind puree

• ½ cup rice malt syrup (see tip)

• 2 tbsp lime juice

• 2 tbsp fish sauce


1. Make tamarind dress­ing by whisk­ing in­gre­di­ents in a small bowl un­til com­bined. 2. Heat oil in a wok over high heat. Stir-fry beef for 3 min­utes or un­til cooked through. 3. Place beef in a large bowl with wom­bok, chilli, peanuts, spinach, herbs and dress­ing. Toss to com­bine.
