Applying a digital grad to a single image can balance the exposure, but it may be impossible to rescue very bright details.

HDR

The HDR tool in Canon’s DPP software allows you to combine up to three exposures as a High Dynamic Range image.

Blending

Combining the best bits of a two or more separate exposures using layer masks in Photoshop or similar software often works well.
