Veg Parcels with Herb Cream

Prepa­ra­tion: 15 mins Cook­ing: 35mins Serves: 4 In­gre­di­ents:

4 medium pota­toes, sliced 1 car­rot, sliced 1 cup but­ton mush­rooms, sliced

1⁄2 cup snow peas 2 zuc­chini, sliced 1 pun­net cherry toma­toes 2 spring onions, chopped

1⁄2 cup basil leaves, chopped Juice and rind of 1 lemon 2 tbsp crushed gar­lic 60g but­ter, melted

Herb Cream:

1 cup sour cream 1 tsp whole­grain mus­tard 2 tbsp chopped basil Mi­crowave pota­toes and car­rots un­til al­most ten­der. Com­bine all veg­eta­bles, basil, lemon rind and juice, gar­lic and but­ter. Cut four pieces of foil. Di­vide veg­eta­bles be­tween foil. Fold edges up to seal. Place in a mod­er­ate oven for 30 min­utes or un­til veg­eta­bles are cooked. Mix all herbed cream in­gre­di­ents to­gether. Serve veg­eta­bles topped with cream.
