Veg Parcels with Herb Cream
Preparation: 15 mins Cooking: 35mins Serves: 4 Ingredients:
4 medium potatoes, sliced 1 carrot, sliced 1 cup button mushrooms, sliced
1⁄2 cup snow peas 2 zucchini, sliced 1 punnet cherry tomatoes 2 spring onions, chopped
1⁄2 cup basil leaves, chopped Juice and rind of 1 lemon 2 tbsp crushed garlic 60g butter, melted
1 cup sour cream 1 tsp wholegrain mustard 2 tbsp chopped basil Microwave potatoes and carrots until almost tender. Combine all vegetables, basil, lemon rind and juice, garlic and butter. Cut four pieces of foil. Divide vegetables between foil. Fold edges up to seal. Place in a moderate oven for 30 minutes or until vegetables are cooked. Mix all herbed cream ingredients together. Serve vegetables topped with cream.
