FOOD 27 June 12, 2019 www.communitynews.com.au Warming up to winter outings avoid going out when it is cold or raining and a lot of hospitality staff lose their passion as we thrive on being busy. “The winter series is as much for our chefs and staff as it is for the customers. “It’s a chance for them to get creative and show our customers another dimension to what we can create with our kitchen. “This is the sort of food our chefs wish they could cook every day.” The Truffle and Cheese Dinner is set to take diners on a journey through delicious decadence with special guest and truffle connoisseur David Coomer, of Coomer Truffles. Coomer will provide guests with an insight into the truffle industry, outlining the production process while giving reason to their rarity and high demand. The series finale, the Vegan Degustation, will incorporate home gardengrown produce to deliver eight courses of 100 per cent vegan cuisine. “We try to have a theme for each dinner and design the whole menu around that,” Sullivan said. “The truffle and cheese dinner is based around truffles farmed from Manjimup and the vegan degustation is obviously a completely vegan experience (including wines).” Executive chef Scott Bridger said he liked to steer away from signature dishes and create dishes that the team could only cook themselves in the weeks leading up to the event. “Some usually make the menu if they’re received (well),” he said. FOOD with Belinda Cipriano BIB and Tucker in North Fremantle is hoping its latest winter series will get Perth foodies off the couch and trying something different. The first of the threepart event took place last month as Fire and Smoke, a menu using only a woodfired oven and charcoal pit to cook mouth-watering meat. Executive chef Scott Bridger and co-owner Eamon Sullivan said this year’s series encapsulated the team’s passion for local and sustainable produce.
