Bistro Morgan, Melbourne The head chef and founder of Bistro Morgan (bistromorgan. com.au) is 16-year-old Morgan Hipworth, who makes more than 1000 of these out-of-thisworld creations every weekend – when he’s not at school.

The Doughnut Bar, Brisbane The small team at The Doughnut Bar (thedoughnutbar.com.au) bakes a vast menu of quirky flavours and shapes – doughnut ice-cream cone, anyone? At the moment, we can’t go past the hand-cut “doughnut fries”.

The Italian Donut Co. by Lena Lu, Perth Lena’s specialty is small batches of bomboloni (handmade Italian doughnuts) filled and topped with goodies such as Nutella and honeycomb and salted caramel with Italian custard. Find them at various Perth growers’ markets (lenalu.com.au). Ruby G’s Canteen and Bakery, Darwin Among the many delicious baked goods and more traditional doughnuts at Ruby G’s (08 8900 7122) is a genius doughnut-like hybrid, the “crozel” (croissant plus pretzel). The next big thing?

Grumpy Donuts, Sydney The menu changes regularly but not the awesome flavour and Instagram-worthiness of everything that comes out of the Grumpy Donuts (grumpydonuts. com) kitchen. Think brown-butter icing with toasted brioche crumbs. Sydneysiders can order online or visit the Camperdown shop.

Gourmet Glaze, Adelaide Gourmet Glaze’s (gourmetglaze. com.au) sweet menu features no less than 19 different flavours – including Apple Cinnamon Pie, Pink Coconut and Island Flake Ring – and there are multiple stores around Adelaide. Bombolini, Canberra At Bombolini (0424 381 235), they make one thing extremely well – handmade Italian doughnuts filled with a variety of custards and jams. Zest is added to the enriched dough, which is left to proof for a longer period to develop a sourdough flavour.

Lady Hester, Hobart Specialising in sourdough doughnuts with Middle Easterninspired fillings, Lady Hester (ladyhestereats.com) is all about grown-up treats. Forget pink glaze and think more along the lines of preserved-lemon curd; dark chocolate, fennel seed and salted caramel; and ginger cream, rhubarb and pistachios.
