In the village of Panzano, Dario Cecchini, the self-styled “butcher of Chianti”, is a flamboyant showman and passionate champion of traditional Tuscan meat. Takeaway options range from the thick-cut T-bone Fiorentina steak that is also served in his in-house grill Officina della Bistecca (one of three eat-in options) to “heritage” products such as the Cosimino meatloaf, which is based on a 16th-century Medici recipe. Cecchini also has a nice line in relishes, including a chilli-laced Mediterranean red pepper sauce.
