In the vil­lage of Pan­zano, Dario Cecchini, the self-styled “butcher of Chi­anti”, is a flam­boy­ant showman and pas­sion­ate cham­pion of tra­di­tional Tus­can meat. Take­away op­tions range from the thick-cut T-bone Fiorentina steak that is also served in his in-house grill Of­fic­ina della Bis­tecca (one of three eat-in op­tions) to “her­itage” prod­ucts such as the Cosimino meat­loaf, which is based on a 16th-cen­tury Medici recipe. Cecchini also has a nice line in rel­ishes, in­clud­ing a chilli-laced Mediter­ranean red pep­per sauce.
