A merging of Peruvian and Japanese cuisines, Nikkei is where seafood, mango and jalapeños meet miso, dashi and udon noodles. The culinary style began blipping on the global radar when Maido (maido.pe) in Lima ranked first on the list of Latin America’s 50 Best Restaurants in 2017. Sen Sakana (sensakana.com) in New York is also getting it right thanks to dishes such as bigeye tuna tiradito with daikon sprouts and chilli cilantro sauce.
