Aged on yeast lees for five years, this super-complex rosé from the Swift family is dry and savoury with candied peel, a hint of marzipan and a long acid-driven finish. Chargrilled quail is the perfect dining companion.

Justin Jarrett is the viticultural maestro of Orange, his showpiece Annangrove Park and Balmoral vineyards envied by all. Jarrett uses the Italian grape glera as the base for his frisky prosecco with perfumes of freshly cut apples and lemon sorbet. Lean, tight and bright, it’s made for rice paper rolls.
