In another life, Darren Farr was head chef at the original Tetsuya’s in Rozelle, Sydney. Nowadays, he runs this café (thelokalsingapore. com) bordering Chinatown. The menu boasts all the hits but a DIY ethos – the butter, spreads and yoghurt are housemade – elevates burgers, salads and toasties. The coffee is doubleshot as standard – hurrah!
