I go to a lot of cheaper places in Sydney’s Chinatown because they’re authentic. It’s hard to go past Happy Chef at the Sussex Centre Food Court (401 Sussex Street, Haymarket). I’ve been going there since it first opened many years ago. People talk about their laksa but I really love the noodle dishes – their wonton long soup is fantastic. I also love a dry soup, which they do with tripe and wontons, beef tendon and beef rib. You put your chilli oil and all your bits and bobs on and have the soup on the side as a delicious drink with sesame oil, white pepper and spring onion. It’s the sort of thing you get in Hong Kong.
