Institut Polaire (institutpolaire.com.au) is a little wine bar in Hobart that’s the perfect place for aperitivo and snacks. The owner is also a winemaker – you can try his Domaine Simha range there – and the snacks, like a classic anchovy toast and egg butter, are great. I always order an Antarctic Dry Martini, made with the house Süd Polaire gin, which they serve in a glass that’s been super-chilled – just the way you want it. Oskar [Rossi, Fico co-owner] and I love to go there in summer and watch the sun go down. It’s just beautiful.
