I really love Etta (60 Lygon Street, Brunswick East; 03 9448 8233) in Melbourne. The owner, Hannah Green, used to be our assistant restaurant manager here at Attica and she’s a young, up-and-coming restaurateur doing a fantastic job. Chef Rosheen Kaul is a huge talent who is going to go all the way. The food is precise and detail-focused, superdelicious but not in a boring fine-dining way. It’s real food and it speaks to me. They have a great bunch of regulars, which I think is the mark of a really top restaurant. It’s easy to be red-hot for a year but to keep your customers for five or six years – that’s what it’s all about.
