Tasmanian gin at its best
Taking inspiration from his time visiting perfumers across France, George Burgess has created a three-layer experience with his gins. The first impression is on the nose, the second is that first sip and the third is the initial breath after swallowing as more botanicals are liberated at the back of the palate. Now, after 10 years of creating spirits, he intends to share his knowledge through gin-making workshops on site. Those who visit the Southern Wild Distillery can even enjoy experimental batches that may one day reach a bottle. Take a sip and begin the story.
