BANANA BREAD
• Preheat the oven to 180°C.
• Line a loaf tin with baking paper.
• Mash 2 bananas with a fork.
• Sift 250 g self-raising flour and 1 tsp baking powder into a bowl, then stir in ¼ cup (55 g) firmly packed soft brown sugar.
• Whisk together 100ml sunflower oil, 100ml milk and 2 eggs, then add to the flour mixture.
• Stir in the mashed bananas and ½ cup walnuts, then pour the mixture into the prepared tin.
• Bake for 50-55 minutes, or until a skewer inserted in the centre comes out clean.
• Leave to cool for 15 minutes, then gently tip out onto a wire rack to cool completely.
