Dairy Without Cows
Animal-free dairy may sound impossible but Australian researchers are looking to replicate the creamy goodness of milk in a way that is lactose- and cholesterol-free. The CSIRO’s Food Innovation Centre is working with start-up company Eden Brew to develop animalfree dairy products. The process starts with a yeast which, when fermented, produces proteins. While fermentation is used to make cheese, yoghurt, beer and wine, in this case it is more precise. Researchers produce the same casein and whey proteins found in cow’s milk to form a base which – when combined with minerals, sugars, fats and flavours – creates ‘milk’.
Expecting to launch in late 2022, Eden Brew’s products will provide consumers who want sustainable, plant-based, allergen-free alternatives to cow’s milk with another option.
