salted al­mond brit­tle

Prep time 5 mins, plus set­ting time Cook­ing time 7 mins Makes ap­prox. 10–12 large shards

1 cup caster sugar 100g but­ter ½ tsp salt 1½ cups sliced al­monds

1 Grease a large bak­ing tray lightly with but­ter or spray oil.

2 Place sugar, but­ter and salt in a medium saucepan over medium to high heat un­til sugar dis­solves and turns golden brown. Gen­tly swirl if you can see lumps of undis­solved sugar.

3 Add al­monds and stir to coat in caramel. Work­ing fairly quickly, trans­fer to pre­pared bak­ing tray; flat­ten with spat­ula to 5mm thick. Set aside in a cool place for an hour to set. Break into shards. A
