salted almond brittle
Prep time 5 mins, plus setting time Cooking time 7 mins Makes approx. 10–12 large shards
1 cup caster sugar 100g butter ½ tsp salt 1½ cups sliced almonds
1 Grease a large baking tray lightly with butter or spray oil.
2 Place sugar, butter and salt in a medium saucepan over medium to high heat until sugar dissolves and turns golden brown. Gently swirl if you can see lumps of undissolved sugar.
3 Add almonds and stir to coat in caramel. Working fairly quickly, transfer to prepared baking tray; flatten with spatula to 5mm thick. Set aside in a cool place for an hour to set. Break into shards. A
