UNDER THE TABLE

A unique restaurant in Norway is at the forefront of a new wave in fine dining. The aptly named Under is Europe’s first underwater restaurant, which doubles as a research centre for marine life while dishing up high-quality and locally sourced produce with an emphasis on sustainable wildlife capture. Half-sunken into the sea on the southernmost point of Norway’s wild and rugged coastline, Under’s 34-metrelong monolithic form breaks the surface of the water to rest directly on the seabed five metres below.
