When you think of fine dining, it’s typically French or Italian that comes to mind. Not so for Kirk Westaway, who is determined to put British food back on the culinary map at his Singapore restaurant JAAN by Kirk Westaway. Since becoming executive chef in 2015, the rising star of the restaurant world has poured his British heritage into the one-Michelin-starred restaurant’s seasonal menus.
Located on the 70th floor of Swissôtel The Stamford hotel, JAAN sees Westaway put a modern spin on traditional British dishes. The set seasonal menu, entitled ‘Reinventing British’, heroes ingredients imported from the United Kingdom and features creative reimaginings of classics including fish and chips (small morsels of cured cod poached in aromatic milk, enclosed in potato tartlets) and potato soup (served with a seaweed base and truffle trimmings). Whether you go for lunch or dinner, wine pairings are also available, or you can choose your own from the nearly 500 labels available.
And how could we forget the views? The large glass windows offer panoramic vistas over Marina Bay and much of downtown Singapore. Still, it’s the ‘scenery’ on your plate that will prove most captivating, as dish after dish of delectable food comes out from Westaway’s kitchen. jaan.com.sg
