Cherry chocolate bars
IF you’re a fan of the Cherry Ripe chocolate bars, why not make your own? I’ve been told these are better than the bought ones.
WHAT YOU NEED
4x 100g packets of glazed cherries
5x cups of desiccated coconut 1x tin of condensed milk 1x teaspoon of vanilla essence
Red food colouring 30g of copha 3 cups of chocolate melts
In a mixer or a blender combine: Glazed cherries Desiccated coconut Condensed milk Vanilla essence And enough red food colouring to get the pink/red colour.
Stir really well until combined and sticky.
Place a log shape on a lined baking tray and make into any shape you like – balls, stars, bars etc.
Pop in the freezer for an hour. When hard, combine the copha and chocolate melts.
Zap in the microwave for one minute on high then give a good stir.
Dip cherry bars into the chocolate mix using kebab skewers and place into a lined storage container.
Refrigerate until eaten.
