Never will you have had lamb so tender as with this incredible dish.

The seared rump sings with the unique mint pea puree, while every vegetable on the plate is cooked to perfection — from the al dente fresh asparagus that holds the delicious red wine jus to tender orange and purple carrots and baby beetroot, to the mixed potato fondant — regular, purple sweet and orange sweet potatoes that are melt-in-your-mouth soft on the inside with a crispy caramelise­d exterior.
