Molly’s book shows how to combine meat, fish and vegetables flavoured with herbs and spices, adding rice, couscous or quinoa, all in the one pan for an easy clean-up afterwards.

You will need three basic tins of different sizes (depending which dish and method you choose) and foil to go over the top if roasting or grilling.

I especially like the before-and-after pictures side by side, such as pancetta chicken laid out in the pan, ready to roast. Molly details when to add ingredient­s. Whether it’s as simple as chorizo and beans, baked haloumi with tomato and garlic, or peach custard tart, these no-fuss recipes look delicious.
