A sweet treat that’s low on guilt

This is an edited ex­tract from Golden Door at Home ($49.95, Golden Door Aus­tralia).

AV­O­CADO & CAROB TART

serves 8-10

cup raw al­monds 8 med­jool dates, pit­ted Finely grated zest and juice of ½ man­darin 2 avo­ca­dos

3 tbs carob pow­der

3 tbs co­conut sugar 1½ tbs co­conut oil

3-4 drops vanilla ex­tract 1 tsp maca pow­der 250g fresh berries such as rasp­ber­ries, blue­ber­ries and straw­ber­ries

1 quan­tity berry coulis (500g of mixed berries – fresh if pos­si­ble, if not avail­able use frozen va­ri­eties mixed with 1 tbs or­ganic maple syrup) Line a 25cm spring form cake tin with cling wrap.

To make the base, grind the al­monds and dates in a food pro­ces­sor un­til well com­bined and the con­sis­tency is al­most that of a paste.

Add the man­darin zest and juice and process un­til it forms a soft dough. Place mix­ture into the tin and press to cover base.

To make the fill­ing, place all fill­ing in­gre­di­ents in a food pro­ces­sor and blend un­til silky smooth. Spoon on top of the base and smooth out.

Freeze for 2 hours then serve with fresh berries and coulis.
