A sweet treat that’s low on guilt
Get a taste of the famed health retreat Golden Door at home

AVOCADO & CAROB TART
cup raw almonds 8 medjool dates, pitted Finely grated zest and juice of ½ mandarin 2 avocados
3 tbs carob powder
3 tbs coconut sugar 1½ tbs coconut oil
3-4 drops vanilla extract 1 tsp maca powder 250g fresh berries such as raspberries, blueberries and strawberries
1 quantity berry coulis (500g of mixed berries – fresh if possible, if not available use frozen varieties mixed with 1 tbs organic maple syrup) Line a 25cm spring form cake tin with cling wrap.
To make the base, grind the almonds and dates in a food processor until well combined and the consistency is almost that of a paste.
Add the mandarin zest and juice and process until it forms a soft dough. Place mixture into the tin and press to cover base.
To make the filling, place all filling ingredients in a food processor and blend until silky smooth. Spoon on top of the base and smooth out.
Freeze for 2 hours then serve with fresh berries and coulis.
