A cool, re­fresh­ing white from coastal Vic­to­ria, it has crisp, ripe stone fruit char­ac­ters, a squeeze of lime and a lick of nougat-sweet good drink­ing and so ver­sa­tile with th­ese dishes.

IRVINE SPRING HILL PRIM­I­TIVO ROSÉ 2017, $22

From Eden Val­ley, South Aus­tralia, this rosé has a dis­tinct and pretty per­fume of sweet straw­ber­ries with a faint dust­ing of pep­per er spice. The palate is al­most ost dry, show­ing just a lick of red berry fruiti­ness. It’s thirst-slak­ing stuff.
