DARWIN’S newest food truck is dishing Mexican food with a view. Taco Daze operates from the Nightcliff foreshore every Tuesday serving a range of tacos and bowls. The brainchild of Lucy Coonan, the food truck was inspired by a family tradition where tacos were eaten every Tuesday.

“It started as an idea about three years ago as a joke with mum,” she said. “We used to do taco Tuesday. “One day I saw a van available on buy, swap and sell and I thought why not, and it’s come together really well.”

The menu changes regularly offering up vegan, and meat options.

For those who don’t want to eat tortillas Ms Coonan said they could opt for the taco bowl which was the filling of two tacos without the tortilla.

She said it was great for people who couldn’t eat gluten. She has also accommodat­ed for

people with gluten intoleranc­es and offers up corn tortillas.

“The corn ones I get are from a Mexican wholesaler in Melbourne that are made traditiona­lly, they are a bit different because you have to soak them in water first,” she said.

“I had to do a bit of research to make sure I didn’t get one that didn’t taste like cardboard.”

Ms Coonan said had upped her taco filling game since opening the food truck.

“I don’t have a set menu I just see what people like and try to bring them back,” she said.

“I’m always asking people if they have suggestion­s it keep things interestin­g for me.”

Taco options she has offered up since opening in April include beef bulgogi — play on Korean barbecue complete with coconut sriracha, pumpkin and quinoa — spiced pumpkin, quinoa with guacamole and cashew cream.

She also makes a pulled spiced jackfruit filling as well as pork carnitas and beef brisket.

With the help of her sister, cousin and a handful of mates Ms Coonan dishes out about 400 tacos on a Tuesday evening.

She said next dry season she would like operate two nights a week down at the foreshore.

In the meantime Taco Daze can be found at local venues such as the Trader Bar and Beaver Brewery for special occasions.
