BEER SNOBS’ UNIQUE TASTE
UNFORTUNATELY for many beer lovers, it turns out the snobs were right.
Craft beer is scientifically unique when compared with mass-produced brews, according to researchers at the University of Queensland.
Study authors used a technique called mass spectrometry proteomics to identify, quantify and characterise the proteins in 23 different types and brands of beer.
“Craft beer was strikingly different to beer from multinational breweries,” associate professor Ben Schulz said.
He said the team initially thought there would be a difference between various styles of beers, such as lagers, pale ales, IPAs and stouts.
However, the results proved otherwise.
Dr Schulz said proteins from yeast made craft beers distinct from beers from larger breweries.
