Once a specialist ingredient found in health food stores, tahini has very much hit the mainstream. Made from ground sesame seeds, it has a creamy consistency and a mild nutty taste. The seed paste can separate from the oil when it’s stored, so stir it well before using. Tahini is the base for many Middle Eastern dips, including hummus, and is great drizzled on grilled meats and vegies. It’s also a good source of calcium.
