PRO­SCIUTTO-WRAPPED ROAST PORK WITH MAPLE GLAZE

FOR THIS RECIPE.

2 ta­ble­spoons finely chopped fresh thyme leaves, plus ex­tra sprigs to serve 4 gar­lic cloves, crushed 1 ta­ble­spoon ex­tra vir­gin olive oil 10 thin slices pro­sciutto 2 x 800g pieces pork scotch (neck) 1kg or­ange sweet potato, peeled, cut into 1cm-thick rounds 1 red onion, sliced into rounds 40g but­ter, melted ¹⁄³ cup maple syrup 400g snow peas, trimmed, steamed 1 cup frozen peas, steamed

1 Pre­heat oven to 160°C/140°C fan-forced. 2 Com­bine thyme, gar­lic and oil in a small bowl. Layer 5 slices of pro­sciutto, slightly over­lap­ping, on a chop­ping board. Place 1 piece of pork length­ways on pro­sciutto. Rub pork with ½ the thyme mix­ture. Sea­son with pep­per. Wrap pro­sciutto around pork. Tie with kitchen string at 4cm in­ter­vals to se­cure. Re­peat with re­main­ing pro­sciutto, pork and thyme mix­ture. Place the pork pieces in a large greased roast­ing pan. Roast for 40 min­utes. 3 Re­move pork from oven. In­crease oven tem­per­a­ture to 200°C/180°C fan-forced. Trans­fer pork to a plate. Ar­range sweet potato and red onion slices, over­lap­ping slightly, in roast­ing pan. Com­bine melted but­ter and maple syrup in a bowl. Brush veg­eta­bles in pan with ½ the maple mix­ture. 4 Place pork on veg­eta­bles. Roast for 20 min­utes. Brush pork with re­main­ing maple mix­ture. Roast for a fur­ther 20 min­utes or un­til pork is just cooked through. Cover pork loosely with foil. Stand for 10 min­utes be­fore slic­ing. Serve pork with roasted veg­eta­bles, steamed greens and ex­tra thyme sprigs.
