SMOKED SAL­MON PENNE WITH MIXED HERBS AND LE­MON

SERVES 4 PREP 5 MIN­UTES COOK 15 MIN­UTES

400g dried penne pasta 2 ta­ble­spoons roughly chopped fresh chives ¹⁄³ cup chopped fresh dill 1 tea­spoon finely grated le­mon rind ¼ cup le­mon juice ¼ cup ex­tra vir­gin olive oil 100g sliced smoked sal­mon, torn 60g baby rocket 1 le­mon, cut into wedges, to serve

1 Cook pasta in a large saucepan of boil­ing, salted wa­ter fol­low­ing packet direc­tions. Drain. Re­turn to pan. 2 Add chives, dill, le­mon rind, le­mon juice and oil to pasta. Sea­son with salt and pep­per. Toss to com­bine. 3 Add sal­mon and rocket. Toss gen­tly to com­bine. Di­vide be­tween bowls. Serve with le­mon wedges.
