SMOKED SALMON PENNE WITH MIXED HERBS AND LEMON
SERVES 4 PREP 5 MINUTES COOK 15 MINUTES
400g dried penne pasta 2 tablespoons roughly chopped fresh chives ¹⁄³ cup chopped fresh dill 1 teaspoon finely grated lemon rind ¼ cup lemon juice ¼ cup extra virgin olive oil 100g sliced smoked salmon, torn 60g baby rocket 1 lemon, cut into wedges, to serve
1 Cook pasta in a large saucepan of boiling, salted water following packet directions. Drain. Return to pan. 2 Add chives, dill, lemon rind, lemon juice and oil to pasta. Season with salt and pepper. Toss to combine. 3 Add salmon and rocket. Toss gently to combine. Divide between bowls. Serve with lemon wedges.
