1 (150g) red onion, thinly sliced 20g olive oil 20g dark brown sugar ¼ tea­spoon salt 2 pinches of ground black pep­per 300g beet­root, peeled, quar­tered (see notes) 1 green ap­ple, peeled, cored, quar­tered (see notes) 3cm piece fresh gin­ger, peeled 20g cur­rants 40g ap­ple cider vine­gar (see notes) ½ tea­spoon ground all­spice

1 Place onion, oil, sugar, salt and pep­per into mix­ing bowl and sauté 5 min/120°c/ / speed 1. Trans­fer to a bowl and set aside. Do not clean mix­ing bowl. 2 Place beet­root, ap­ple and gin­ger into mix­ing bowl and chop 5 sec/speed 7. Scrape down sides of mix­ing bowl with spat­ula. 3 Add cur­rants, vine­gar, all­spice and re­served onion mix­ture. Cook 20 min/100°c/ / speed 1 or un­til beet­root is soft. Trans­fer to a bowl and set aside to cool for 5 min­utes be­fore serv­ing (see notes).
