Quick Beetroot Relish
SERVES 16 ACTIVE TIME 10 MINUTES TOTAL TIME 40 MINUTES
1 (150g) red onion, thinly sliced 20g olive oil 20g dark brown sugar ¼ teaspoon salt 2 pinches of ground black pepper 300g beetroot, peeled, quartered (see notes) 1 green apple, peeled, cored, quartered (see notes) 3cm piece fresh ginger, peeled 20g currants 40g apple cider vinegar (see notes) ½ teaspoon ground allspice
1 Place onion, oil, sugar, salt and pepper into mixing bowl and sauté 5 min/120°c/ / speed 1. Transfer to a bowl and set aside. Do not clean mixing bowl. 2 Place beetroot, apple and ginger into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula. 3 Add currants, vinegar, allspice and reserved onion mixture. Cook 20 min/100°c/ / speed 1 or until beetroot is soft.
