Frozen Pineap­ple Cream

50g raw sugar 4 fresh mint leaves, plus ex­tra, to serve 600g frozen pineap­ple, plus ex­tra, thawed, to serve 60g co­conut milk (see notes) 2 egg whites

1 Place sugar and mint into mix­ing bowl and mill 10 sec/speed 10. Scrape down sides of mix­ing bowl with spat­ula. 2 Add pineap­ple, co­conut milk and egg whites and chop 40 sec/speed 7, with aid of spat­ula. 3 Scrape down sides of mix­ing bowl with spat­ula and chop 20 sec/speed 7, with aid of spat­ula. 4 Insert but­ter­fly whisk. Whip 40 sec/ speed 4 or un­til smooth and creamy. Re­move but­ter­fly whisk. 5 Di­vide be­tween serv­ing bowls. Serve im­me­di­ately with ex­tra pineap­ple and mint.
