Frozen Pineapple Cream
SERVES 4 ACTIVE TIME 5 MINUTES TOTAL TIME 10 MINUTES
50g raw sugar 4 fresh mint leaves, plus extra, to serve 600g frozen pineapple, plus extra, thawed, to serve 60g coconut milk (see notes) 2 egg whites
1 Place sugar and mint into mixing bowl and mill 10 sec/speed 10. Scrape down sides of mixing bowl with spatula. 2 Add pineapple, coconut milk and egg whites and chop 40 sec/speed 7, with aid of spatula. 3 Scrape down sides of mixing bowl with spatula and chop 20 sec/speed 7, with aid of spatula. 4 Insert butterfly whisk. Whip 40 sec/ speed 4 or until smooth and creamy. Remove butterfly whisk. 5 Divide between serving bowls. Serve immediately with extra pineapple and mint.
