Beef is the word at this year’s ul­ti­mate nose-to-tail event, Beef Aus­tralia 2018 in Rock­hamp­ton. From 6-12 May, cat­tle farm­ers will rub shoul­ders with chefs, as vis­i­tors en­joy some of the world’s best beef. Celebrity chefs, in­clud­ing Cur­tis Stone, Ben O’donoghue, Adrian Richard­son and Iron Chef Hiroyuki Sakai will demon­strate how to use the whole car­cass, in­clud­ing for­got­ten cuts.
