LEMON CAKE
SERVES 8 PREP 10 MINS COOK 50 MINS
• ¾ cup butter, at room temperature
• ¾ cup caster
sugar
• 2 large eggs
• 1¼ cups
self-raising flour • ⅓ cup milk • Finely grated rind and juice of 1 large lemon • ¼ cup icing
sugar, sifted
1 Preheat oven to 160°C. Grease and line an 11 x 22cm loaf pan with baking paper. Using electric beaters,beat butter and caster sugar in a bowl until pale and creamy.
2 Add eggs, flour, milk and lemon rind. Mix well until combined. Spoon into pan. Smooth top.
3 Bake for 45-50 minutes or until cooked when tested with a skewer.
4 Meanwhile, mix the icing sugar and lemon juice until combined. Pour over cake as soon as it comes out of the oven.
5 Leave in pan until completely cold. Decorate with lemon slices if desired.
