SUPER QUICK BRUSCHETTA

• 4 vine-ripened tomatoes, diced • ¼ cup chopped fresh parsley • ¼ cup chopped fresh basil • 2 tblsps balsamic vinegar • 4 large garlic cloves, crushed • 8 slices fresh crusty bread, such as sourdough

1 Combine the tomatoes, parsley, basil, vinegar, half the crushed garlic and ⅓ cup of olive oil in a bowl. Season mixture with sea salt and black pepper. Cover and stand for 30 minutes. 2 Preheat a sandwich press until hot. Combine remaining garlic with ¼ cup olive oil in a small bowl. Brush the garlic oil over the bread slices on both sides. Cook the bread in batches, for about 2 minutes, or until golden brown. 3 To serve, scoop tomato mixture onto bread slices. Garnish with fresh basil sprigs or parsley, if desired.
