VEGIE BEAN PAT­TIES

SERVES 6 TIME 30 MINS

• 1 large sweet potato,

peeled and chopped • 2 car­rots, peeled

and chopped

• 1 onion, diced

• 220g can baked

beans

• 1 cup dried

bread­crumbs

1 Steam or mi­crowave sweet potato and car­rot un­til ten­der, trans­fer to large bowl. Heat

1 tblsp olive oil in a saucepan over medium heat. Add onion, cook for 3 to 4 min­utes, or un­til soft.

2 Add the baked beans and cook for a fur­ther 5 min­utes, stir­ring con­stantly so the beans don’t stick. Cool for 5 min­utes. Com­bine with the ve­g­ies and mash with a fork. Add ½ cup of the bread­crumbs and mix to com­bine.

3 Di­vide into 6 por­tions and shape into pat­ties. Coat pat­ties in re­main­ing bread­crumbs.

4 Heat 1 tblsp oil in a large non-stick fry­ing pan over medium heat. Cook pat­ties for 5 min­utes on each side, or un­til browned. Drain on kitchen pa­per towel.

5 Serve pat­ties on seeded rolls with let­tuce, cu­cum­ber rib­bons, baby rocket leaves, a dol­lop of aioli and lime or lemon wedges, if de­sired.
