VEGIE BEAN PATTIES
SERVES 6 TIME 30 MINS
• 1 large sweet potato,
peeled and chopped • 2 carrots, peeled
• 1 onion, diced
• 220g can baked
• 1 cup dried
1 Steam or microwave sweet potato and carrot until tender, transfer to large bowl. Heat
1 tblsp olive oil in a saucepan over medium heat. Add onion, cook for 3 to 4 minutes, or until soft.
2 Add the baked beans and cook for a further 5 minutes, stirring constantly so the beans don’t stick. Cool for 5 minutes. Combine with the vegies and mash with a fork. Add ½ cup of the breadcrumbs and mix to combine.
3 Divide into 6 portions and shape into patties. Coat patties in remaining breadcrumbs.
4 Heat 1 tblsp oil in a large non-stick frying pan over medium heat. Cook patties for 5 minutes on each side, or until browned. Drain on kitchen paper towel.
5 Serve patties on seeded rolls with lettuce, cucumber ribbons, baby rocket leaves, a dollop of aioli and lime or lemon wedges, if desired.
